Chilly Chili

It's been a little chilly here in Florida. Perfect time for some chili/soup. Here is an excellent recipe from my boss. It is super easy, and so good, husband and I had to control ourselves from licking the bowl :)

Ingredients:

1 roll of ground sausage (I use mild because other ingredients are spicy)

1 can of rotel diced tomatoes with green chilis (perfect amount and taste but anything will do)

2 cans of black eyed peas (undrained)

1 onion

1/2 cup of water

Garlic

Salt and Pepper

Cook the sausage with chopped onions, add to pot. Pour cans of diced tomatoes, black eyed peas and 1/2 cup of water into the pot. Add salt and pepper, and garlic to taste.

Let simmer until ready you are ready to eat. This is one of those meals that the longer you cook it the better it tastes, and is even better as leftovers. You can serve it over rice, or add chunks of potatoes to the recipe if you're not a rice person.

Note: simmer the soup on the stove in a chili pot or in a crock pot. I chose the crockpot, browned the sausage at lunch, put all the ingredients in and let it simmer on low all afternoon, and it was ready to eat when we got home at 5.
